"Cheesy Bacon Savory Bread Pudding"
The other day I had leftover bread from my previous recipes, thus this idea came up. Usually bread pudding is being done using oven, but since I have no oven at home, I decided to incorporate the usage of my microwave and toaster. It speed up the process and only took half the amount of time than using oven.
Furthermore, you are free to substitute in all kinds of ingredients to your taste. A good and fast recipe to wipe off your leftover ingredients and yet yield delicious results. This recipe that I'm gonna share with you is very flexible. You can substitute bacon with other kinds of meat (bratwurst, minced beef, or even mushrooms), spring onions with other kinds of herb (mixed herb etc), mixing an array of cheese to your taste.
Ingredients - 2 servings - 30 mins
- Bacon - 3 to 4 slices cut into 1/2 cm bits,
- Spring Onions - 4 stalks diced, 1 stalk cross diced for garnishing
- Cherry Tomatoes - 10, halved it
- Stale Bread - Any kind (I used wholemeal) - 4 slices, cut into cubes and toasted
- Shallots - 3 cloves minced
- Cooking Wine - 4-5 tbs
- Butter - 3 tbs
- Eggs - 2-3 eggs
- Salt and Pepper to taste
- Half & Half - 300-400ml ( can substitute w/ full milk, but half & half bring out the flavors better)
- Parmiggiano Reggiano - 100g-200g grated, depending on how cheesy you want your bread pudding to taste. (options to use different kinds of cheese)
After getting all your ingredients prepared, in a saute pan, pan fry bacon with butter for about 5 minutes then add in shallots and spring onions cook till soft and fragrant then add in garlic, tomatoes and cooking wine let it simmer and reduce for a few minutes. After its been reduce by half or 2/3, turn off the heat.
In a large bowl, whisk the eggs, half & half together with the bacon mixture. After its been combine add in the grated cheese. Salt and pepper to taste. Soak the bread cubes in and sit in fridge for at least 15 minutes. You can refrigerate overnight to bring out more flavors.
After sitting the bread cubes, pour into ramekins or casserole and pop in the microwave on high for 8-12 minutes depending on your microwave watts (mine's 800W). then toast in toaster till golden brown. Alternatively if you have a oven at home. Pop into preheated oven 350 degrees for 30-40 minutes until golden brown. Check if its cooked by sticking a chopstick in, it should come out clean.
Garnish with spring onions and it's done!!!
