Good day peeps! I will be doing a series of Thai cuisine recipes in the coming weeks. I am a big fan of Thai food, especially that spiciness packed along with different herbs, spice and ingredients! Yummy!!!
This week, I'm sharing this healthy & appetizing salad that is oh-so-easy to make! You can have it as a salad sides for a gathering, simply enjoy this as a meal on its own.
The main essence of this salad come from the dressing. Likewise the same as Japanese cuisine, Thais have their own set of golden combination seasoning as well which is fish sauce, sugar and lime juice. In this recipe, the golden combi will be in the ratio of 1-1-1, pretty simple isn't it?
Traditionally, the sauce is being mixed with crushed dried shrimps and chili before drizzling over glass noodle. But in this recipe I decided to add in an additional ingredient to the dressing- dried scallop which adds another layer of taste to the salad.
Ingredients - 2 Servings - 30 minutes
- 3tbs of fish sauce
- 3tbs of sugar
- 3tbs of lime juice
- 1tbs of dried shrimps
- 1 tbs of dried scallops
- 1 thai chilli or chili padi
- 6 sprigs of chinese celery, cut in 2 inches long
- 12-16 cherry tomatoes, halved
- 12 grey prawns, shelled and cleaned
- 1 whole onion, sliced
- 150g of minced pork
- 3 pack of glass noodle (50g each)
When the water is boiling, add in the glass noodles. Cook for about 5 minutes, when the glass noodles are soft and translucent, it is done. Take the noodles out and ready a big metal bowl for the combining of ingredients.
Add chinese celery, tomatoes, onions, minced pork, prawns into bowl first and the glass noodles last on top of those ingredients. Then drizzle in the dressing onto the glass noodles and start tossing along with other ingredients underneath. Adjust seasoning to your taste if its not enough.
Ready a serving plate and you're DONE!!!!
