Mother's Day is just around the corner, & now it's your chance to do something for your mum this year!

I use to make 5-Spice Chinese pork jerky during Chinese New Year & I've always been wanting to use the same marinate on a whole chicken! Finally got the chance this week - tweaked the marinate by incorporating rosemary & lessen the sugar content with honey. & it turns out pretty good! One of my friend commented on my Instagram post: 'Why rosemary though?'

So here's my explanation: I needed something to reduce the unpleasant 'chicken' taste. We often use ginger in the 'Asian' context. But me deviating from traditions like to incorporate western w/ eastern. You'll be surprised how well rosemary goes with soy & 5 spice. Not too much though rosemary can be very overpowering on its own. 

Disclaimer: by no means am I a professional chef, it's just my take on what I think would work well with 5 spice marinate to bring out the best in this recipe. :)

INGREDIENTS - 1 WHOLE CHICKEN - 1 TO 2 HOURS

Rosemary 5-Spice Marinate

  • 1.2 kg size of whole chicken
  • 2 tbs of fish sauce
  • 1 tbs of garlic powder or grated garlic
  • 3 tbs of soy sauce
  • 2 tbs of 5 spice powder
  • 1 tbs of paprika
  • 2.5 tbs of honey
  • fresh squeezed lemon juice, half a lemon
  • 2 tsp of Worcestershire sauce
  • 1 tbs of oyster sauce
  • 1.5 sprigs of rosemary, leaves only, chopped

Roast Chicken Stuffing

  • 6- 7 garlic cloves
  • 1 whole lemon, halved
  • 1.5 sprigs of rosemary w/ stem
  • twine for tieing

Roasted Baby Potatoes

  • 300 g of baby potatoes
  • salt & pepper to taste
  • 1 tbs of vegetable oil
  • lemon slices & garlic cloves

PREPARATIONS

5-Spice Roast Chicken

In a mixing bowl, combine all the ingredients of the marinate. Next, using a brush, coat evenly onto the fresh whole chicken (cleaned & patted dry) including the inside of the cavity. Then stuff the chicken with whole garlic, lemon & rosemary. Tie the ends of the thighs together to keep all the stuffing in. 

Marinate at least 1 hour in the chiller or overnight, leave it to rest in room temperate for 20 minutes before roasting it in the oven.

In the roasting pan, lay the potatoes on it (w/ all the accompaniments - salt, pepper etc). Then the whole chicken on top of the potatoes. Baste the chicken again with leftover marinate.

Microwave Combi Grill Oven - roast in the oven at 450W + 180C for 20 minutes breast side down. Then flip over the chicken, baste it again with the leftover marinate, and roast for another 25 minutes at 300W + 180C. After which baste it one last time & use the hotblast function for 5-8 minutes at 200C to crisp up the skin.

The suggested settings are based on the Samsung Combi Grill Convection Microwave Oven (MC35J8088LT/SP). Every combi oven works differently, do take this as a point of reference.

Convection Oven - Roast for 1 hour 20 minutes at preheated 190C/390F. Duration varies between oven & size of chicken. 

Rest the freshly roasted chicken for at least 10 to 15 minutes before carving the chicken. Or serve it whole.
