Finally get the chance to use my Char Siu recipe from my stash of unpublished recipe this week. The 11th recipe in collaboration with Harvey Norman Singapore, I was given the task to craft out a recipe featuring the product - Philips Smokeless Griller (HD6370).  

Char Siu - prevalent in Cantonese cuisine, is a pork dish that's been marinated then barbecued or roasted to attain a sweet & toasty flavor which is often served as a side dish, or along with rice to complete as a meal.

Instead of using pork shoulder or pork belly (common parts for Char Siu), I managed to get my hands on a bunch of Iberico Pork Collar - which tasted perfect after grilling as the meat have a good amount of marbling in it. 

& often, Char Siu can be quite heavy on it's own, so in order to balance out the flavors, I've decided to make a dip to go along with it. Something light w/ acidity to help reduce the overwhelming taste from the flavorful meat. 

INGREDIENTS - 10 SKEWERS - 45 MINUTES (excluding marinating time)

Char Siu Pork Collar

  • 500 g of pork collar, in cubes (1.5") - or pork belly
  • 2 tbs of dark soy sauce
  • 1 tbs of light soy sauce
  • 15 g (2.5 cubes) of red beancurd, fermented
  • 0.5 tbs of sesame oil
  • 1.5 tbs of shaoxin wine
  • 2.5 tbs of honey
  • 2 tbs of sugar
  • 6 clove of garlic, minced
  • 1.5 tbs of ginger, minced
  • white pepper to taste 

Scallions for skewing - optional**

Lime Cilantro Sour Cream

  • 150 ml of sour cream
  • half lime juice
  • 2 tbs of cilantro, chopped

PREPARATIONS

Combine the char siu marination ingredients in a big mixing bowl. Then add in the meat, mix it well & leave in the chiller overnight. After which, remove the meat from the chiller and skewer the meat alternating with the scallions pieces. Save the leftover marination for the glazing during grilling.

Next, prepare the griller. Brush the griller w/ oil or spray with oil. Then grill the skewers for about 3-4 minutes on each side. Glaze the meat with leftover sauce when grilling.

For the dip, combine all the ingredients together in a bowl. 

Squeeze fresh lime juice on the skewers when serving & dip it with the sour cream! Enjoy!
