Finest Turns 10: Bread & Peanut Butter Pudding

Happy 10th Anniversary FairPrice Finest SG! In collaboration with FairPrice Finest's #GourmetMadeSimple theme this year, I'm recreating this Bread & Peanut Butter Pudding back at my home kitchen! If you are a fan of peanut butter, YOU HAVE TO TRY THIS! 

With just 6 simple ingredients - milk, eggs, cream, peanut butter, brown sugar & brioche slices which you can find most of the ingredients easily at FP Finest. You can also recreate this recipe into small little ramekins (which the original recipe calls for).

INGREDIENTS - 8" Ceramic Skillet - 40 MINUTES

  • 200 ml of milk
  • 200 ml of cream
  • 4 eggs
  • 80 g brown sugar
  • 12 brioche slices
  • 100 g of peanut butter
  • Cinnamon powder - Optional
  • Crushed toasted peanut & peanut butter for garnishing

PREPARATIONS

Grease oven proof ramekins or skillet with peanut butter. 

Whisk together milk, cream, eggs & brown sugar. I like to add a touch of cinnamon powder at this point of time. Cut brioche slices to square cubes or cup size. 

Brush brioche with peanut butter, transfer into the ramekins/skillet. Pour in the cream mixture into the ramekins/skillet. Let the bread cubes soak in the mix for at least 20 minutes in the chiller. Then send to bake at preheated 180C/365F for 35 minutes to 40 minutes. Time varies depending on the performance of the oven.

Serve this with crushed toasted peanuts & a dollop of peanut butter for the additional crunch & texture. It helps in the presentation of the dish as well! Enjoy!
