Invite-A-Friend: Orange Lemongrass Chipolata Tacos w/ Ruth

Hello everyone! I am so excited to introduce the second guest from XLBCR Invite-A-Friend series. Featuring Singer Songwriter - RUTH.

I met Ruth when we were both in the same music school, & have been hanging out ever since. She's someone who I look up to as I really admire her courage in chasing dream & turning passion in music into her full time career.

Age 26 this year, Ruth had her first successful EP released back in 2014 who also managed to establish her own identity in Singapore as an independent singer song writing artist. Prominent in the Live Music scene, she co-founded her own company called 'White Ribbon Live Music' in 2013, where she cater live music solutions for newly weds & corporate events. Her team & company have been growing at a rapid rate ever since.

Despite being friends for the longest time, I have never asked her in depth with regards to many major decisions she has made in her life. Taking this chance, I got to ask her a few questions that I hope it may bring light to some of you guys.

Why did you decide to turn music into your career which deviates from the society norm?

I love singing and writing songs. I can't imagine myself doing anything else other than music. The idea of spending my life working for other people's dreams scares me. Instead, I would like to my dream come true.

How is your lifestyle & working hours like compared to the office hours job?

I usually work at night and over the weekends. Holidays are never holiday for us due to events & performances. Work and play are pretty much the same thing. I can work at any time in the day or even perhaps still writing songs at 2 am till the wee hours.

Did you ever regret making the choice to be in this line of work?


What are your upcoming plans?

Release a new singles this year.

Where do you get your song writing inspirations from?

I get them from my failed relationships (hahaha), life experiences & things that revolve around my life in general.

How many songs have you written under your profile?

About 100? Including the crappy ones.

Why is Tacos your favorite food?

Cus it's fuss free! For my busy life that is. You don't need utensils to eat them & you can practically put all kinds of fillings in there which is kinda relatable to my life. 

What is your advice for people who lack the courage to chase their dream?

It all starts with that very first step! If you have a passion or dream, be it learning a new skill or starting a new business. Make that concrete first step & you will be one step closer to achieving your dream.

INGREDIENTS - 8 Tacos - 1 Hr

Lemongrass Chipolata

  • 350 g of chipolata sausage, remove the fillings from the skin
  • 2 cloves of garlic
  • 5 g of ginger
  • 4 sprigs of lemongrass
  • 1 1/2 tbs of turmeric powder
  • 2 tsp of coriander powder
  • 4 tbs of brown sugar
  • 2 tsp of fish sauce
  • salt & pepper to taste

Light Pickled Fennel & Red Onions

  • 1 medium size fennel, cut into half inch strips
  • 1 medium size red onion, cut into small cubes
  • 400 ml of white distilled vinegar -  substitutable w/ grain vinegar 
  • 300 ml of water
  • 4 tbs of salt
  • 80 g of sugar
  • 4 tbs of freshly squeezed orange juice - optional

Honey Orange Dressing

  • 100 g of greek yogurt
  • 100 g of mayonnaise
  • 1 1/2 tsp of orange zest
  • 3 tbs of honey - taste & adjust accordingly
  • 1 tbs of soy sauce
  • 1 tsp of grated ginger
  • 1 clove of minced garlic

To Assemble

  • 8 tacos skin 4"D - can be soft corn tortilla, or hard tortilla shells
  • a handful of mint & coriander
  • crumbled feta
  • orange flesh
  • red chilli slices for garnishing


Lemongrass Chipolata

In a mortar, add in garlic, ginger & lemongrass (white tender part only). Using pestle, grind it into a paste like mixture. After removing the fillings from the skin, in a mixing bowl combine all the ingredients together including the paste and mix it well.

Alternatively, you can blend the garlic ginger & lemongrass in a food processor followed by the meat & other ingredients together in the mixer.

Light Pickled Fennel & Red Onion

In a large bowl or container/jar combine all the ingredients together and let it sit for at least 1 hour in the fridge. You can store this up to a few weeks & it'll definitely taste better as it age.

Honey Orange Dressing

Combine all the ingredients together in a bowl & mix it well.


On the tacos skin, add in few spoon of lemongrass chipolata fillings, crumbled feta, orange flesh, mint & coriander, pickled fennel & onions. Finish it off with a dollop of honey orange dressing. ENJOY! Oh don't forget some beer to go along with the TACOS!
